New Weight Watchers Ice Cream Products

My name is Fergie and I am an ice cream addict.  Really, it’s true! If given the choice between cakes and cookies or ice cream, i will go ice cream every time.  But such a habit does not do well for a gal who needs to be watching her figure.  Enter Weight Watchers Ice Cream.  I was already a die-hard fan of their Ice Cream Candy Bars, and now Weight Watchers Ice Cream has six new products – and four of them are 100 calories or less!  Here are the new flavors:

  • Chocolate Dipped Strawberry Dessert Bar: Low fat strawberry ice cream with a strawberry swirl dipped in milk chocolate
  • Dark Chocolate Raspberry Cheesecake Dessert Bar: Low fat cheesecake ice cream with a raspberry swirl dipped in dark chocolate
  • Dark Chocolate Dulcé de Leche Dessert Bar: Low fat dulcé de leche ice cream with a caramel swirl dipped in dark chocolate
  • Strawberry Fruit Bar: Made with real fruit and an excellent source of vitamin C with 15% fewer calories and 30% less sugar than other national leading brands of fruit bars
  • Snack Size Chocolate Fudge Bar: The award-winning Chocolate Fudge Bar now in a snack size
  • Snack Size Variety Pack of Ice Cream Sandwiches in Vanilla Bean and Dutch Chocolate: Snack size versions of the classic dessert

I am delighted to say that I’ve tried them all and they are each delicious.  I like my ice cream to be extra firm and quickly found out that I needed to keep these treats in an very cold freezer to get them to the consistency I like (i.e. a cement block).  They make a great dessert at the end of my long days and I look forward to curling up in bed with my Weight Watchers Ice Cream.  The fact that I can enjoy it guilt-free is SUCH a bonus.

Bagels and Lox

I’m trying a new diet and this morning’s breakfast called for a whole-wheat thin bagel, lowfat cream cheese, tomato slices and…lox.  I’m not a huge lox fan, but past experience has taught me that if I don’t eat protein for breakfast, the rest of my day is doomed.  So I decided to brave the mushy/slimy texture of the fish – tell myself that it was not in fact raw, as it seemed, and assemble my Dr. Oz-prescribed breakfast sandwich.

I was pleasantly surprised! The flavor of the salmon was mild and not “fishy” as I had expected. And it added a touch of salt which is my weakness.

Who says an old dog can’t learn new tricks?

Remembering Why I Don’t Knit

Every so often I start getting discouraged and generally overwhelmed at the current blueprint of my life.  Why am I putting in a full day at my day job and then coming home an moonlighting until the wee morning hours? Remind me again why I spend some precious evenings and weekend days at Blogalicious meetings? I can’t help but think it would be so much easier to pack it all up and just be content with a full, but simple, existence.  I could garden. Or bake. Or knit. (Ok, fine.  So I’ll never really knit.)

And then it happens.  I have a great meeting with some awesome folks and they give me fabulous feedback about Blogalicious and how amazing it is and how the experience impacted their lives.  Or I attend an event hosted by friends that have totally embraced and pursued their passion and are making serious waves.

And then I remember.  I burn the midnight oil and sacrifice down time because it’s what I was meant to do. We’ve created something that’s larger than ourselves and we owe it to our community to deliver.  And I love doing it.  I know it’s cliche but it’s true – doing what you love doesn’t feel like work.

Knitting on the other hand…

Truth.

There’s been a lot of talk around the Facebooks and the Twitters and the blogs lately about “doing what makes you happy” and “taking a risk” and “moving out of your comfort zone” and whatnot.

It all sounds good. No, bump that. Actually it all sounds fabulous.  I’d love to pick up and move my family to France for a year or to New York City for a a month.  Or to enjoy all-expense paid jaunts here there and everywhere.  Or to work my passion full time out of the top floor of my “sprawling” brand new house.  Or to pursue anyone of my 9+ dreams.  But the reality is that I can’t. Those things aren’t paying my bills.

And it’s frustrating me.  How can people just up and do those things? What am I missing?

Talking Strategy at Mom 2.0 Summit


2011 Mom 2.0 Summit - April 14-16

I’m all itchy and twitchy because it’s been a whole 2.5 months since my last blogging conference. The good news is that I’ll be headed to New Orleans next month for the Mom 2.0 Summit.  I’ve heard such great things about the conference and can’t wait to go. I’ve also been working closely with Laura Mayes and Carrie Pacini (but more on that another day) – and they are delightful.  What’s even more exciting is that I’ve been invited to speak alongside some of the mom blogosphere’s most heavy hitters.  The sage Susan Getgood and I will be presenting a session called “High Tea and High Strategy.”  I won’t give the details away, but I can assure you that we have plans for a knockout session.

Looking forward to seeing many of you there. Oh and the beignets.

Girltime + Brunch = Recipe for Good Times

A couple of weeks ago, my friend Camille hosted a pre-Valentine’s Day brunch to reunite our old book club group.  We began back in 2003 and called ourselves “Sisters With Books.” Get it? SWB? Ahem.  Anyway, over the years some of us moved to different cities or had kids and fell off the map (me) and we drifted apart.  I was beyond excited when I got Camille’s invite to her SWB Reunion Brunch! This group of ladies is so amazing.  Everyone has their ish together and is so supportive and genuine.  After a couple hours of catching up, I literally left her place feeling refreshed and rejuvenated.  Another brunch is definitely in store.

Food Fest 365! The Officially FUN FOOD Holiday Cookbook

Boy, have I got a book for you cookbook enthusiasts out there.  Doesn’t it seem like we’ve been celebrating lots of different food holidays lately?  Well, you don’t know the half of it! Chef Yvan Lemoine of iFoods Studio, recently published Food Fest 365! – an assortment of recipes celebrating every single food holiday of the year.  Don’t believe me? Watch this:

What’s on tap for tomorrow, March 3rd? NATIONAL COLD CUT DAY!  How’s about a Baked Italian Roll to celebrate?

 

Baked Italian Rolls

Serves 4–5 (or 3 hungry teenagers)

Ingredients:
Olive oil, Pizza dough (recipe, Sept. 5), 1 tablespoon dried oregano, 3 tablespoons black olives (sliced), Black pepper, 1⁄4 pound mortadella (sliced), 1⁄4 pound cappicola (sliced), 1⁄4 pound sopressatta (sliced), 1⁄4 pound Genoa Salami (sliced), 1⁄4 pound provolone (sliced), 6–8 pepperocinis (sliced), 1⁄2 cup roasted red pepper (sliced), 1 egg, Sesame seeds.
Directions:

❶ Drizzle a little olive oil on a clean counter and your hands. Place the pizza dough—use my recipe or pick some up at your favorite pizza joint—on the oiled surface. Using your fin- gertips, press and spread the dough out to a rectangle as wide as your loaf pan, and about three times as long (the long side should be vertical to you). Make sure it’s even.

❷ Sprinkle with the oregano, the sliced olives, and a little pepper (add any other spices that you want: garlic powder, chili flakes, etc…)

❸ Lay down the cold cuts one meat at a time, coating the surface of the dough. Stack the meats on top of each other as you lay each layer across the dough.

❹ Make the top layer the cheese, topped with pepperoncinis and roasted red peppers.

❺ To roll, start with the side closest to you and roll up, encasing all the delicious meats and cheese inside. Oil the inside of a loaf pan with a little olive oil and cover the dough with the pan. Sneak your fingers under the pan, grabbing the dough together with the pan, and flip it.

❻ Drizzle with a little olive oil, cover with alumi- num foil, and cook at 400°F for 30 minutes.

❼ Remove from the oven place on top of the stove.
❽ Make an egg wash by whisking the egg together, and brush the roll. Sprinkle with the sesame seeds and return to the oven for 3–5 minutes until golden all around.

❾ Remove from the oven and allow to cool for 5 minutes. Run a knife around the edges and pop the roll out, cut using a serrated knife, and serve piping hot. I love this!

 

Oh we are going to have a field day with this book.

ReadySetEat: Quick Dinner Ideas and Recipe Reviews

Here’s the thing about dinner: we have to eat it every.day. Keeping my family fed with an interesting variety of meals each day can be an exhausting prospect.  I’m always searching for tasty, easy, and most of all quick recipes that I can get on the table in 30 minutes or less.  Enter ReadySetEat.com.

The site offers healthful meals that feature ConAgra products – meaning that the recipes are made up of easily accessible and affordable ingredients.  The recipes are searchable by what main ingredient you want to cook or by how much time you have. Now THAT’s speaking my language!

I’m delighted that I’ve been given the chance to serve on the ReadySetEat Shared Tastes Panel.  Each month, I will be making and reviewing 4 recipes from the site and sharing my experiences in the Reviews section below each recipe [Look for the reviews tagged FOODe].  I’m all about quick dinners and I love trying out new recipes, so you can imagine that I am excited about this project. I hope you’ll check out the site with me and add some new recipes to your dinner arsenal in the process.

So far, one of my favorite recipes has been the Spinach Walnut Penne:

This recipe was my favorite one of this week’s batch! Simple, yet flavorful and healthy. I loved the “one-pot” aspect – I was able to throw all of the ingredients into one pot and let it work. To be honest, I was a little skeptical of adding walnuts to the dish, but I have to say that it works :) {I am amazed at the lack of seasoning these recipes call for; this particular one was fine without any additional herbs or spices.}
